Building a Home Pantry That Actually Works

Twenty ingredients that unlock 200 dishes — no specialty store required.

Most home cooks own too much and use too little. A working pantry is small, sharp, and rotated often.

Start with: cumin seeds, mustard seeds, turmeric, coriander powder, red chilli powder, garam masala, bay leaf, cinnamon, cardamom, cloves.

Add basics: basmati rice, toor dal, moong dal, chickpea flour, ghee, mustard oil, tamarind, jaggery.

Finish with the fresh trinity: ginger, garlic, green chilli. Buy them weekly. Everything else is decoration.

Cook from this pantry for one month and you'll never feel lost in front of a stove again.
